Concentrated raw material cooked on a garnish of vegetables, spices and herbs
The raw material (meat, bones, vegetables, etc.) is cooked at low temperature for several hours with a vegetable garnish to obtain a first broth, which is then slowly reduced until the desired texture and intensity are obtained.
