Cold zucchini, feta & mint soup

Ingredients
- 2 zucchinis
- 30cl ARIAKÉ Pur n°1 chicken stock
- ½ bunch fresh mint
- 10cl whipping cream
- 100g feta cheese
- Salt and freshly ground pepper

The steps
- Rinse the zucchinis under running water, then chop roughly. Place the zucchini pieces in a saucepan.
- Season with salt and pepper, then add the chicken stock.
- Cover and simmer for 30 minutes.
- Thin out ½ bunch of mint over the zucchini casserole. Blend with an immersion blender.
- Adjust seasoning if necessary.
- Refrigerate for 3 hours.
- When ready to serve, add the whipping cream and blend until smooth.
- Pour into serving bowls.
- Crumble a little feta cheese over each bowl.
