Ingredients
- 3 medium red beets
- 50cl ARIAKÉ Pur n°1 chicken stock
- 15cl vinegar
- 2 sprigs dill
- 10cl whipping cream (optional)
- Salt and freshly ground pepper

The steps
- Peel the beets and cut into small cubes.
- Place in a saucepan.
- Season with salt and pepper, then add the chicken stock.
- Cover and cook over medium heat for 1 hour.
- Add the vinegar and cook over medium heat, covered, for a further 30 minutes.
- Add the dill and adjust the seasoning if necessary, then blend very coarsely with an immersion blender.
- Leave to rest in the fridge for 3 hours.
- To serve, add whipping cream if desired, then pour into serving bowls and enjoy.
