Ingredients

  • 3 medium red beets
  • 50cl ARIAKÉ Pur n°1 chicken stock
  • 15cl vinegar
  • 2 sprigs dill
  • 10cl whipping cream (optional)
  • Salt and freshly ground pepper

The steps

  1. Peel the beets and cut into small cubes.
  2. Place in a saucepan.
  3. Season with salt and pepper, then add the chicken stock.
  4. Cover and cook over medium heat for 1 hour.
  5. Add the vinegar and cook over medium heat, covered, for a further 30 minutes.
  6. Add the dill and adjust the seasoning if necessary, then blend very coarsely with an immersion blender.
  7. Leave to rest in the fridge for 3 hours.
  8. To serve, add whipping cream if desired, then pour into serving bowls and enjoy.
