Glazed green asparagus cream

Ingredients

  • 2 bunches medium-sized green asparagus. They may be a little damaged or second choice.
  • 50cl Gourmand n°2 Ariake chicken stock
  • 20cl whipping cream
  • Salt and freshly ground pepper

The steps

  1. Peel the asparagus and cut into small sections. Place in a saucepan. Season with salt and pepper, then add the Ariake n°1 pure poultry stock. Cover and cook over medium heat for 1 hour.
  2. Adjust the seasoning if necessary, then blend very coarsely using an immersion blender. Leave to rest in the fridge for 3 hours.
  3. When ready to serve, stir in the whipping cream, pour into serving bowls and enjoy.
