Ingredients
- 4 cups PUR broth
- 1 cup paella rice
- Mixed seafood (mussels, shrimp, squid)
- Red and green peppers, diced
- Onion, chopped
- Garlic, minced
- Saffron
- Paprika
- Green peas
The steps
- In a large paella pan, sauté the onion, garlic and peppers in olive oil.
- Add the rice, saffron and paprika, and sauté for a few minutes.
- Pour in the hot shellfish stock and add the green peas.
- Simmer over low heat for about 20 minutes, adding the seafood halfway through.
- When the rice is tender and the seafood cooked, remove from the heat and leave to stand for a few minutes before serving.
