Thai broth with salmon and quinoa

Ingredients
– 600 g salmon
– 200 g quinoa
– 200 g button mushrooms
– 25 cl coconut milk
– 1 leek white
– 2 sachets ARIAKÉ Thai broth
– salt and pepper
– olive oil
Les étapes
- Rinse the leek and mushrooms under a trickle of water. Remove the rootlets from the leek. Chop finely. Cut mushrooms into thin strips.
- Cook quinoa in boiling water for 15 min. Drain and set aside.
- Remove the skin from the salmon, then cut into medium-sized cubes.
- Pour 1.5 liters of water into a saucepan. Add the 2 sachets of ARIAKÉ Thai broth. Bring to the boil. Add coconut milk and chopped leek.
- Arrange 50 g cooked quinoa on each serving plate. Add 150 g raw salmon cubes, then pour the hot broth over each plate.
