Ingredients
- 4 cups Gourmand ready-to-use chicken broth
- 400 ml coconut milk
- Chicken breast, diced
- Mushrooms (straw, shiitake or button)
- Lemongrass, kaffir lime leaves and galanga (or ginger)
- Red pepper (to taste)
- Fish sauce and lime juice for seasoning
The steps
- Heat the chicken stock and coconut milk in a saucepan.
- Add the chicken, mushrooms, lemongrass, kaffir lime leaves, galanga and chili pepper.
- Simmer until the chicken is cooked.
- Season with fish sauce and lime juice to taste.
- Serve hot.
